A frozen cloud of light ube mousse rests on layers of silky Ceylon tea cremeux, airy cheesecake soufflé and a crisp lengua croustillant base, finished with lightly torched meringue. Each layer is carefully balanced to let the distinct flavour of ube shine through, bringing an iconic Filipino flavour to Singapore in a truly unique creation.
